To mark its tenth anniversary, Cotswolds distillery Capreolus created its most ambitious eau-de-vie yet, using around two tonnes of hand-picked English elderberries, fermented for over five weeks and triple distilled to yield a tiny quantity of spirit, diluted to 43% ABV. Expect a richly aromatic nose of heather honey, sandalwood, elderflower and cocoa, leading to a palate of beeswax, almond, lemon zest and rowanberry. Hand-filled and labelled in tiny numbers, this is a rare, collectable release for serious eau-de-vie enthusiasts rather than casual drinkers.
