The Coteaux Bourguignons Canope Laisse Tomber Bastian Wolber is produced by Bastian Wolber under his Laisse Tomber label. Sourced from various parcels within the Coteaux Bourguignons appellation, the wine undergoes 100% whole-cluster, ambient yeast fermentation with semi-carbonic maceration. The wine undergoes malolactic fermentation in tank and is aged 10-12 months in used barrels (228 L and/or 350 L) without fining or filtration, with minimal SO2 added at bottling (approx. 10 ppm).
