A 100% Chardonnay sparkling wine from Wiltshire, made using the traditional Champagne method. It fermented with indigenous yeasts and aged in old oak and amphorae, giving it lovely complexity. This vintage needed a precise dosage to balance its natural acidity, and it's bottled unfined and unfiltered for further evolution in the bottle.
