Crafted from organic grapes grown on clay soils in Essex's Crouch Valley, this Pinot Blanc was whole-bunch pressed and fermented with wild yeasts before ageing in old oak and stainless steel. It delivers notes of ripe apple, preserved lemon and peach kernel, balancing a rich, leesy texture with bright acidity and saline minerality. Bottled without filtration and with minimal sulphur, this limited release offers a pure, expressive and persistent finish.
