Billecart-Salmon Grand Cru Blanc de Blancs is a non-vintage cuvée crafted exclusively from Chardonnay sourced from four distinct grand cru villages in the Côte des Blancs. This assembly primarily utilises fruit from Avize, Chouilly, Cramant and Mesnil-sur-Oger to balance chalky tension with opulent fruit. The winemaking process incorporates a significant proportion of reserve wines to ensure consistency and depth, alongside a low dosage that highlights the mineral terroir. It exhibits a crystalline profile of white flowers, lemon curd and fresh almonds, underpinned by a sharp, flinty acidity and a delicate mousse. The fine bead is a result of slow fermentation at low temperatures within the estate’s historic cellars, ensuring a persistent and elegant mouthfeel.
