The Eric Rodez Blanc de Noirs Edition 35 NV is crafted from 100% Pinot Noir, showcasing a blend derived from specific vintages. 2018 (26%), 2017 (24%) and 2016 (22%), alongside 28% reserve wines. Vinified primarily in oak barrels (90%), with a small portion fermented in tanks, this Champagne exhibits notable complexity. With malolactic fermentation applied to just 10%, the wine maintains a distinct character, while a low dosage of 2.0g/l lends a focus to its expression. Eric Rodez is a pioneer in organic and biodynamic viticulture in Ambonnay, employing aromatherapy across his vineyards in order to enhance the health of his vines.
