Mujaku Junmai Daiginjo 2025 is an ultra-premium sake produced by Horie Brewery in Yamaguchi Prefecture, Japan. Crafted from 100% Isehikari rice, often referred to as `miracle rice`, it undergoes meticulous polishing to an exceptional 18% seimaibuai, far surpassing the Junmai Daiginjo standard of 50%. This release is characterised by its potential for ageing, allowing for a gradual evolution of flavour profiles over time.
