This is an exceptionally crafted champagne that perfect illustrates the evolution of reserve wines over time. Each year, a meticulous selection of the finest wines capable of ageing, originating from various vineyard plots with shallow, chalky soils, is introduced into a `réserve perpétuelle` [500 and 600-liter barrels] initiated back in 1985. In December 2017, approximately two-thirds of the solera was bottled [leaving the remainder for blending with the young wines of the year], and then the wine aged `sur lattes` for 36 months before disgorgement.
