La Scolca is one of the most respected producers in Gavi, the Piedmont appellation built around the Cortese grape, and best known for its flagship Gavi dei Gavi (Black Label) white wine. This grappa is distilled from the pomace, the skins and pips left after pressing those same Cortese grapes, capturing the grape`s delicate, floral character in spirit form. Expect an aromatic nose of white flowers and orchard fruit, with a smooth, warming palate rather than the harsher, rustic style associated with cheaper grappas. Best served chilled after a meal.
